Recipe
My friend Lauren gave me her tortilla soup recipe and it is SOOOO good. The whole family gobbled it down...and with a toddler and preschooler...that is saying something. Thank you Lauren!
Lauren’s Tortilla Soup
• 2 chicken breasts or 2-4 thighs, cooked and shredded (400 degrees for 40-50 min)
• 2T of olive oil
• 1 onion diced
• 2-3 tsp minced garlic
• 2 zucchini cut into half moons
• 2 squash cut into half moons
• 4 cups chicken broth
• 1-15oz can of diced tomatoes
• 1 tsp oregano
• 1 tsp basil
• ½ tsp cayenne
• Salt and pepper to taste...important for final flavor
Toppings:
Avocado, shredded cheese, chips
Cook chicken breasts or thighs (see above). In a large pot, sauté onion and garlic in olive oil for 3-5 minutes. Add zucchini and squash and sauté for 10-15 more minutes until tender. Add the rest of the ingredients and bring to a boil. Turn to low heat and simmer for 30 or more minutes. Add chicken whenever it is done cooking. Top as desired.
